Queso Fundido

Queso fundido (quite literally, melted cheese) hails from Mexico and usually includes chorizo. You'll get maximum gooey stretch from Chihuahua cheese, but Monterey Jack works too. Serve straight from the oven with warm tortillas: Chips will snap under the pressure of this much goodness.

Ingredients

  • 5 ounces uncooked chorizo

  • 1 cup chopped white onion

  • 1 small fresh serrano chile pepper, finely chopped

  • 1 tablespoon vegetable oil (optional)

  • ¼ teaspoon kosher salt

  • 3 cups hredded Chihuahua cheese or Monterey Jack

  • Assorted toppers such as: pico de gallo, avocado, cilantro, and/or sliced radishes

  • Soft corn or flour tortillas, warmed

Directions

  1. Preheat oven to 400°. In an 8-inch cast-iron skillet, brown chorizo over medium, 5 to 7 minutes. Transfer to a plate. In the same skillet, cook onion and chile pepper in vegetable oil (if needed) until softened, 5 to 8 minutes. Add salt. Stir in all but 2 tablespoons of the chorizo. Sprinkle with Chihuahua cheese.

  2. Bake until cheese melts and bubbles, 8 to 10 minutes. Top with reserved chorizo and desired toppers. Scoop into warm corn or flour tortillas.
