Apple Crumble

One bite of this gloriously simple recipe will remind you that, sometimes, you don't mess with a good thing. Chef Jason Qureshi of River Roast in Chicago prefers to use Granny Smith apples for their firm texture and tart taste.

Ingredients

  • 1 cup all-purpose flour

  • ¾ cup regular rolled oats

  • ¾ cup packed light brown sugar, divided

  • ½ teaspoon baking powder

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • ½ cup butter, softened

  • 6 apples, peeled and sliced 1/2-inch thick (6 cups)

  • Vanilla ice cream (optional)

Directions

  1. Preheat oven to 350°. In a medium bowl, stir together flour, oats, 1/2 cup brown sugar, the baking powder, cinnamon and salt. Add butter and rub it in with your fingertips to make a uniform, crumbly mixture.

  2. In a 9-inch pie plate or a 2-quart square baking dish, toss sliced apples and remaining 1/4 cup brown sugar together. Top evenly with the crumb mixture.

  3. Bake until the top is golden brown and apples are tender when pierced with a fork, 40 to 45 minutes. Let cool a few minutes before serving—with ice cream, if you like.
