Grilled Halibut with Watermelon Salsa

A bright and fruity salsa dresses up simple grilled fish in this easy, healthful summer dinner.

4 cups salsa, 1 lb 4 oz. halibut

Ingredients

  • 3 cups finely diced watermelon (from 1/4 large watermelon)

  • 1 cup finely diced ripe mango (from 2 large mangos)

  • 1 cup finely diced red onion (approximately 1/2 red onion)

  • 2 jalapeño peppers, seeded and minced

  • 3 limes

  • ¼ cup chopped fresh cilantro

  • ¼ cup chopped fresh mint

  • ¾ teaspoon salt plus more to taste

  • 4 skin-on halibut filets, 6 to 8 oz. each

  • 2 tablespoons vegetable oil plus more for brushing on the fish

Directions

  1. To make the watermelon salsa, combine the watermelon, mango, red onion, jalapeño peppers, the juice and zest of two of the limes (6 Tbsp. juice and 2 tsp. zest), cilantro, mint and salt in a large bowl. Stir to combine. Refrigerate until needed.

  2. To prepare the fish, place the halibut fillets in a glass dish. Drizzle the oil and the juice of the remaining lime (3 Tbsp. juice, 1 tsp. zest) over the fillets and allow them to marinate for 10 minutes, turning the filets halfway through.

  3. Oil the skin side of the fish, and place skin-side down on a preheated grill pan. Tent lightly with foil. Grill fish over medium-high heat, turning once, until opaque all the way through and fish flakes easily with a fork, 4 to 6 minutes per 1/2-inch thickness of fish.

  4. To serve, spoon salsa over fish filets using a slotted spoon.
