In a large skillet, heat the oil over medium heat. Add egg mixture and cook, without stirring, until mixture begins to set around edges and on bottom. Cook for 2 to 3 minutes more, gently folding with a spatula, until egg mixture is nearly set. Stir in chips and salsa. Cook and gently stir 1 minute more or until eggs are set but still glossy and moist. Top with cheese and cilantro and serve.
