Summer Cobbler

This "pick a fruit, any fruit" recipe is adapted from Michigan chef Abra Berens' cookbook, Pulp. It's pretty sweet, so her suggestion to serve with a dollop of sour cream is genius.

Ingredients

Cobbler Batter

  • 1 cup all-purpose flour

  • 1 cup sugar

  • 1 cup Milk

  • 1 tablespoon baking powder

Summer Cobbler

  • 1 ½ cups summer fruit, such as stonefruit and berries

  • 1 recipe Cobbler Batter

  • ½ cup butter, cut into small pieces

  • 1 tablespoon sugar

  • whipped cream or sour cream (optional)

Directions

  1. Preheat the oven to 350°F and grease a 2-qt. baking dish.

  2. For Cobbler Batter, in a medium bowl whisk together flour, sugar, milk, baking powder, and salt.

  3. For the Summer Cobbler, add the fruit to the prepared baking dish, then pour the Cobbler Batter on top. Dot the butter all over the top of the cobbler focusing on covering the corners. Sprinkle 1 Tbsp. of sugar over the top.

  4. Bake until cooked through and deeply brown, about 60 minutes. Cool 15 minutes before serving. Serve with whipped cream or sour cream.
