Oat Bars with Ginger and Coconut

Inspired by an English treat called a flapjack, these buttery bars have crisp edges and are chewy in the center.

Ingredients

  • 2 cups regular rolled oats

  • ½ cup shredded unsweetened coconut

  • ½ cup unsalted butter

  • ½ cup packed brown sugar

  • ¼ cup pure maple syrup

  • 1 teaspoon ground ginger

  • ¼ teaspoon salt

Directions

  1. Preheat oven to 350°. Line an 8-inch square baking pan with parchment paper. In a food processor, combine oats and coconut; pulse several times. In a medium saucepan, combine butter, brown sugar, maple syrup, ground ginger and salt. Heat over medium until butter melts and mixture just comes to a simmer. Add oats mixture; cook, stirring, 1 minute. Press gently into prepared pan.

  2. Bake until edges are golden and center is bubbly, about 15 minutes. Cool completely. Store bars in an airtight container at room temperature up to 1 week.
