Line an 8-inch square baking pan with parchment paper. In a food processor, combine oats and coconut; pulse several times. In a medium saucepan, combine butter, brown sugar, maple syrup, ground ginger and salt. Heat over medium until butter melts and mixture just comes to a simmer. Add oats mixture; cook, stirring, 1 minute. Press gently into prepared pan. Bake until edges are golden and center is bubbly, about 15 minutes. Cool completely. Store bars in an airtight container at room temperature up to 1 week.
