Moroccan Chicken Stew

Golden raisins and almonds are classic Moroccan ingredients that are essential to this comforting weeknight stew. The raisins add sweetness and the almonds add texture.

Ingredients

  • 3 tablespoons olive oil

  • 1 cup chopped onion

  • 3 cloves garlic, minced

  • 2 teaspoons ground cumin

  • 1 teaspoon salt

  • 1 teaspoon ground coriander

  • ½ teaspoon paprika

  • ½ teaspoon ground cinnamon

  • 1 28 ounce can whole tomatoes

  • 2 cups reduced-sodium chicken broth

  • ½ cup dry lentils

  • 12 ounces green beans, halved

  • ½ cup golden raisins

  • 2 cups cooked shredded cooked chicken

  • 1 lemon, zested and juiced

  • Hot cooked couscous

  • ¾ cup fresh cilantro

  • ½ cup sliced almonds, toasted

Directions

  1. In a large saucepan, heat olive oil over medium heat. Add onion, garlic cumin, salt, coriander, paprika, and cinnamon. Cook until onion is tender, about 5 minutes.

  2. Add tomatoes, breaking them up as you add them. Add chicken broth and lentils. Bring to a boil; reduce heat and simmer, covered, until lentils are tender, about 20 minutes.

  3. Add green beans and raisins; simmer, covered, until beans are tender, 12 to 15 minutes. Add chicken and zest and juice from the lemon. Cook until heated through, 3 to 5 minutes. Serve over couscous; top with cilantro and almonds.
